Marinated Asparagus or Broccoli

Makes 3 Servings

Ingredients

  • 1 pound asparagus or broccoli
  • 1 clove garlic, minced
  • 2 teaspoons lower-sodium soy sauce
  • 2 teaspoons sesame oil
  • 1 1/2 tablespoons grated fresh gingerroot
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar

Instructions

Steam asparagus or broccoli 5 to 7 minutes or cook in the microwave oven on high for 5 minutes. Immediately cool by plunging in cold water. Drain and gently pat dry with paper towels. Combine garlic, soy sauce, sesame oil, ginger, vinegar, and sugar and pour over asparagus or broccoli. Gently toss to thoroughly coat asparagus or broccoli. Cover and refrigerate 1 hour or longer. Serve at room temperature.
