Mixed Green Salad with Orange Mint Dressing
Makes 2 Servings
Ingredients
- 2 cups greens (make your own blend of lettuces, or buy a blend at your grocery store.)
- 1 cup broccoli flowerets
- 1 cup mandarin orange segments
- 1/2 red onion, sliced
- 2 tablespoons toasted hazelnuts or your favorite nut or seed

Instructions
Gently toss all ingredients together. Top with Orange Mint Dressing. Divide into two portions and serve.

Orange Mint Dressing
Ingredients
- 1/2 cup orange juice
- 3 tablespoons rice vinegar
- 2 teaspoons olive oil
- 1 teaspoon Dijon mustard
- 1/4 teaspoon dried mint
