Cindy's Potato Salad
Makes 6 Cups
Ingredients
- 6 cups cubed red potatoes, unpeeled
- 1/2 cup chopped green onion
- 1/4 cup red wine vinegar
- 1 tablespoon olive oil
- 3 tablespoons chipped fresh chives
- 3/4 teaspoon Lite Salt
- 3/4 teaspoon pepper
- 3/4 teaspoon sugar

Instructions
Bring cubed potatoes to a boil and simmer for about 10 minutes or until potatoes are tender but not mushy. Drain well. Add Chopped green onions while potatoes are still warm. In a separate bowl, mix vinegar oil, chives, Lite Salt, pepper and sugar. Add to potato and onion mixture. Cover well and refrigerate until ready to serve.
