Alison's Caesar Salad
Makes 6 Servings
Ingredients
Caesar Dressing
- 2 cloves garlic, minced
- 1 teaspoon anchovy paste
- 1 tablespoon egg substitute
- 1 tablespoon olive oil
- 2 teaspoons Dijon-style mustard
- 1 tablespoon freshly squeezed lemon juice
- 1/2 teaspoon Worchester sauce
- 1/8 teaspoon Tabasco sauce
- 1/4 teaspoon balsamic or red wine vinegar

- 1/4 cup nonfat plain yogurt
Salad
- 12 cups romaine (1 medium head), torn into bite-size pieces
- 1/4 cup grated Parmesan cheese
Instructions
Prepare dressing by combining garlic, anchovy paste, egg substitute, oil, mustard, lemon juice, Worcestershire sauce, Tabasco sauce, vinegar, and yogurt. Mix well and chill until serving time. When ready to serve, toss with romaine. Sprinkle with Parmesan cheese.
