Fresh Pear Bread

Makes 1 Loaf (16 Slices)

Ingredients

  • 2 large fresh pears (mashed with a fork to make 1 cup)
    or 1-16 oz. can juice-packed pears, drained
  • 2 cups Bisquick Reduced Fat All-Purpose Baking Mix
  • 1/2 cup sugar
  • 1/4 teaspoon baking soda
  • 4 egg whites, lightly beaten
  • 1/2 cup nonfat plain yogurt
  • 1/3 cup chopped walnuts

Instructions

Preheat oven to 350°F. Peel, core and mash pears with a fork. Combine Bisquick, sugar, nutmeg, and baking soda. Mix beaten egg whites and yogurt. Combine all ingredients with chopped nuts and put batter into a lightly oiled 9-by-5 inch loaf pan. Bake for 50 minutes or until a wooden pick inserted in the center comes out clean.
