Prawns and Beans Tuscan Style

Makes 4 Servings (1-1/2 cups each)

Ingredients

  • 3/4 pound raw, shelled shrimp or 1 pound prawns in shells
  • 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 2 - 15 1/2 oz. cans small white beans, drained and rinsed
  • 1 - 15 1/2 oz. can unsalted chopped tomatoes, not drained
  • 2 tablespoons dried basil leaves or 1/2 cup chopped fresh basil
  • 1 1/2 teaspoons dried parsley or 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon pepper
  • 2 teaspoons freshly squeezed lemon juice

Instructions

Remove shells, if needed, from prawns and rinse in cold water. Heat olive oil in a large skillet, add garlic, and sauté until golden. Add shrimp or prawns and sauté until almost cooked (not quite pink and opaque); add beans, undrained tomatoes, basil, parsley, and pepper. Cook for several minutes until heated and prawns are cooked. Stir in lemon juice. Serve hot.
