Garden Stroganoff
Makes 4 Servings
Ingredients
- 3 cups broccoli flowerets
- 4 medium carrots, peeled and bias-sliced (2-1/2 cups)
- 1 teaspoon olive oil
- 3/4 pounds well-trimmed beef round steak, thinly sliced
- 1 pound fresh mushrooms, thickly sliced
- 1 medium leek or 1 cup green onions, 1/4" bias-sliced
- 2 cloves garlic, minced
- 1/4 cup flour, divided
- 2 cups nonfat milk

- 1 tablespoon lite soy sauce
- 1/2 cup dry white wine or water
- 1 cup nonfat plain yogurt
- 1 cup nonfat ricotta cheese
- 1/4 cup grated parmesan cheese
Instructions
Combine the broccoli and carrots. Steam or microwave until crisp-tender. Drain and set aside. Heat oil in a large nonstick skillet. Add sliced meat and brown. Add mushrooms, leeks or green onions, and garlic. Stir-fry over medium heat 3 to 5 minutes. Blend in 3 tablespoons flour. Stir in milk and soy sauce; cook and stir until mixture is thickened and bubbly.
