Acapulco Enchiladas

1/2 cup

Tomato Slices
1/2 cup

Bell Pepper Slices
1/2 cup

Peaches

Low or Nonfat Milk

2 Grain, 2 Vegetable, 2 Fruit, 1 Meat, 1.5 Dairy

Menu Tips

For the pinto beans, cook your own or choose low sodium canned. Eat whole or mashed.

If beans seem dry, mix in a few diced tomatoes or salsa.

Arrange tomato and bell peppers slices together on plate, drizzle with a little olive oil or low fat vinaigrette.
